Raw Carrot Cake Slice
The health perfect recipe in time for easter packed with raw goodness.
- 1.5 Cups Walnuts vv
- 2 Carrots grated
- 1 Cup Dates Soaked
- 1/4 Cup Saltanas
- 2 tsp Cinnamon & ginger
- 2 tsp Pure vanilla
- 1/2 cup Almond flour
- 1 Cup Cashews Soaked for 1 hour
- 1/2 lemon juiced
- 2 tsp maple syrup
- Blend base ingredients (apart from carrot, sultanas and almond flour )in a high power food processor until mixed but not smooth.
- Add mixture to a bowl and mix in grated carrot, sultanas and almond flour.
- Press into a lined tin and place in the fridge or freezer
- To make the icing blend everything until smooth
- smooth over the base and freeze until set
