Raw Carrot Cake Slice

Ingredients
  

Base

  • 1.5 Cups Walnuts vv
  • 2 Carrots grated
  • 1 Cup Dates Soaked
  • 1/4 Cup Saltanas
  • 2 tsp Cinnamon & ginger
  • 2 tsp Pure vanilla
  • 1/2 cup Almond flour

Icing

  • 1 Cup Cashews Soaked for 1 hour
  • 1/2 lemon juiced
  • 2 tsp maple syrup

Instructions
 

  • Blend base ingredients (apart from carrot, sultanas and almond flour )in a high power food processor until mixed but not smooth.
  • Add mixture to a bowl and mix in grated carrot, sultanas and almond flour.
  • Press into a lined tin and place in the fridge or freezer
  • To make the icing blend everything until smooth
  • smooth over the base and freeze until set
